Juice of 3 lemons

Zest of 2 lemons

2 garlic cloves, minced

½ teaspoon salt

Freshly ground pepper to taste

¼ cup olive oil

4 boneless, skinless chicken breast halves, cut into 1-inch chunks

Metal skewers, or wooden ones soaked in water

 

  1. In a medium bowl, mix together lemon juice, lemon zest, garlic, salt, and pepper. Slowly whisk in oil to form a marinade.
  2. Put chicken in a shallow dish and drizzle with marinade. Let marinate at room temperature about 10-15 minutes.
  3. Prepare grill. Thread chicken onto skewers and grill for about 5-7 minutes per side, until cooked through.

Side suggestions: Tomato-avocado salad.  Mix together 1 diced avocado, 2 diced tomatoes, 2 T minced red onion, ½ t salt, and juice of 1 lemon. Let sit for a few minutes and then serve with chicken. Couscous.
