6 medium tomatoes, seeded and chopped into 1-inch chunks

½ red onion, diced

¼ cup fresh basil, coarsely chopped

2 garlic cloves, minced

4 teaspoons capers

2 tablespoons olive oil

4 teaspoons balsamic vinegar

1 teaspoon kosher salt

8 ounces angel hair pasta

¼ cup grated Parmesan cheese

 

  1. Combine tomatoes, onion, basil, garlic, capers, oil, vinegar, and salt in a large bowl. Let marinate at room temperature for 30 minutes.
  2. Cook pasta according to package directions, omitting fat and salt. Drain pasta, toss with tomato mixture, and top with Parmesan cheese.
