Fresh Tomato Pasta

6 medium tomatoes, seeded and chopped into 1-inch chunks
½ red onion, diced
¼ cup fresh basil, coarsely chopped
2 garlic cloves, minced
4 teaspoons capers
2 tablespoons olive oil
4 teaspoons balsamic vinegar
1 teaspoon kosher salt
8 ounces angel hair pasta
¼ cup grated Parmesan cheese
- Combine tomatoes, onion, basil, garlic, capers, oil, vinegar, and salt in a large bowl. Let marinate at room temperature for 30 minutes.
- Cook pasta according to package directions, omitting fat and salt. Drain pasta, toss with tomato mixture, and top with Parmesan cheese.
