4 cups old fashioned oats, certified gluten-free if needed

1/4 cup spelt flour or gluten-free flour if needed

1/2 cup shredded unsweetened coconut

1/3 cup brown sugar

1/2 cup chocolate chips

1/2 cup dried cranberries

1/4 cup plain pumpkin seeds

1/2 teaspoon kosher salt

1/2 cup coconut oil

1/2 cup maple syrup

 1 teaspoon vanilla extract

1. Preheat oven to 325 F.

2. Combine the first 6 ingredients in a bowl.

3. In a small saucepan, combine coconut oil, maple syrup, and vanilla extract.

4. Pour the wet ingredients over the oat mixture and stir to combine.

5. Place granola mixture on a parchment lined baking sheet and shape into a rectangle, about 13 x 9 x 1 inch thick.

6. Bake for about 30 minutes, until golden.

7. Allow to cool and then cut into bite-sized pieces. Note it will be very crumbly. Use crumbles as granola and eat sprinkled over yogurt or with almond milk. Store in an air-tight container for up to a week.
