1 ripe avocado, pitted and peeled

1 (15-ounce) can cannellini beans, rinsed and drained

¼ cup fresh parsley

Juice of 1 lime

1 garlic clove, sliced

½ - 1 teaspoon kosher salt (start with ½ teaspoon and increase if needed)

1 tablespoon extra-virgin olive oil

 

1. Combine ingredients in a food processer. Pulse to chop and then process until smooth.

Bonus: high in fiber, iron, potassium, and vitamin C; low in sugar and sodium.
