Salsa de Tomatillo

The original recipe that I followed called for 10 tomatillos. But because I am signed up for a small farm share I only had 4. So I halved it and adapted it to what I had on hand. Here is my adapted version:
Salsa de Tomatillo
4-5 tomatillos
1/2 small Sweet onion, chopped
2 cloves garlic, chopped
1 jalapeno pepper, chopped
2-3 tablespoons chopped fresh cilantro
Kosher salt freshly ground pepper to taste
1. Husk tomatillos, rinse, and place in a saucepan. Fill with water to cover. Bring to a boil and simmer for 10 - 12 minutes, until tomatillos soften and start to burst.
2. Drain tomatillos and let cool.
3. Place tomatillos in a food processor. Add onion through cilantro and pulse until desired consistency. Season with salt and freshly ground pepper.
Enjoy with tortilla chips or as a topping for grilled meats or Mexican food. Refrigerate leftovers in an airtight container.
