Pan-Fried Fish

Whether your child loves fish or you are trying to get them hooked on fish, this is a good recipe to try. It's a little messy, but it's also pretty easy, and a lot of fun when prepared together with your kids. 

We used the basic recipe for pan-fried sole, but substituted cod and cut the fish into smaller pieces, that looked like fish tenders. You could even cut them into fish sticks for homemade fish sticks.

1. Start with fresh white fish, such as cod, sole, flounder, or haddock. (Choose the fish that looks the freshest at your local market).

2. Cut into desired size and sprinkle with salt.

3. Set up 3 shallow bowls: the first with flour, the second with lightly beaten eggs, and the third with panko bread crumbs.

4. Dip fish into each of the 3 bowls and then place on a plate.

5. Heat canola oil and butter in a large nonstick skillet over medium heat.

6. Add fish and cook for 3-4 minutes on each side or until golden and cooked through.

7. Transfer cooked fish to a plate or platter.

8. Serve with your favorite sides and enjoy!
