Green Smoothies!

My son Elliott loves smoothies. So does my husband. I usually make berry smoothies, often with a a handful of spinach or kale thrown in there. Why not.

But lately I've been trying to diversify a bit. One of my favorite smoothies is one with avocado and spinach -- two foods I would otherwise have trouble getting into Elliott. He helps me make the smoothies and knows what I put in them, so it's not that I'm disguising the foods, they just taste better to him when whipped up with a little milk and honey. 

Skeptical? Give this recipe a try. You can play around with the ingredients to make the smoothies as "healthy" as you want. Start with just avocado if you think the little specks of leafy greens will be a turn-off. Or just tell your child they are green sprinkles!

 

Green Smoothie

Makes 2 large or 4 small smoothies

1/2 avocado

1 banana

1/2 - 1 cup honeydew (or other green) melon

1 tablespoon honey

1 handful of baby spinach or kale (or start with just one little leaf)

1 cup plain low-fat kefir or milk*

 

1. Put all ingredients in a blender and puree to combine. Add milk if too thick. 

2. Pour into glasses and serve.

 

*Any type of milk is fine - dairy, rice, soy, almond. 

 

Nutrition Info (for 2 large smoothies): 240 calories; 37 g carb; 8 g pro; 8 g fat (2.5 g sat); 100 mg sodium; 3.5 g fiber
