Cod Nuggets

Kids + Nuggets = Smiles. 

Kids love chicken nuggets, so why not try serving them fish nugggets. Fresh cod holds up well in this recipe and kids will love its tenderness. It starts out with a crunch and then melts in your mouth. An irrestistible combination.

Both my boys love this recipe, although Elliott's favorite is still pan-fried fish. You could try this recipe with salmon too, but it will have a more distinct flavor. 

Cod Nuggets

Servings: 4

1.25 pounds cod fillet

1/2 teaspoon Kosher salt

1/2 cup flour

1 egg, whisked

1 cup Panko Bread Crumbs*

*Italian, Plain, Whole Wheat, or a combo. I like to use a combo of Italian and Whole Wheat, but in these pictures I used just Italian.

1. Cut cod into small pieces/nuggets. Sprinkle with salt.

2. Place flour, egg, and breadcrumbs into 3 different shallow bowls or plates.

3. Dip nuggets into flour, then egg, and then breadcrumbs. 

4. Heat oil in a large nonstick skillet over medium heat. Add panko crusted cod nuggets and cook for 3-4 minutes on each side, until golden brown all around and opaque on the inside.

Serve with green vegetables such as steamed broccoli, snap peas, green beans, baby spinach, or kale. Add some more veggies, maybe carrot sticks or bell pepper slices, a favorite whole grain starch, a lemon wedge, and dinner is done.
