Basil Dressing

My mom is an incredible cook. Yet some of her best recipes are also the simplest, like this basil dressing. It is so fresh and just one taste evokes the essence of spring and the summer days ahead.  It’s perfect for drizzling onto a salad and also makes a great dip for baguette or other fresh-baked crusty bread.

Basil Dressing

2 cups packed fresh basil leaves (about 1 package of store-bought basil, thick stems removed or the leaves from 1 small basil plant)

½ cup extra virgin olive oil

2 tablespoons balsamic vinegar

2 garlic cloves, sliced

Add ingredients to a blender or food processor.

Puree until smooth.

Store for up to a week (if it lasts that long!) at room temperature in a covered container.
